Day After Shepherd's Pie

What to do with all those holiday leftovers?!?!?

Granny’s favorite is Day After Shepherd’s Pie. It is always a warm welcome on the chill December days!

1 lb- shredded or chopped leftover meat (Turkey and/or Roast)

Any amount up to a pound of the following: Left over green beans, carrots, corn, or other vegetable.

Up to 2 cups of gravy

2 teaspoons sage

2 teaspoons thyme

2 teaspoon rosemary

3 cup mashed potatoes. More if you want a thicker layer.

1 cup Grated cheese of your choice (Granny likes cheddar)

Place all ingredients except potatoes and cheese in bottom of deep-dish pie dish. Mix well. If there is not enough gravy to make it moist and similar to a thick stew, then add a can of tomato sauce and/or a ½ cup of broth at a time to make it slightly stewier. Too much will make it runny, not enough will make it dry. Layer mashed potatoes over the meat and veggie mixture, salt and pepper to taste, and top with grated cheese. Bake for 35 minutes at 350 degrees or until cheese is melted and slightly browned. Let stand for 5 minutes before serving.
