What to do with all of the left over easter eggs...

12 boiled eggs

½ cup Mayonnaise

Dash of Paprika

Cut egg in half long way. Spoon out boiled yolk into mixing bowl. Place boiled egg white halves on a platter or serving dish with empty yolk hole side up. Mix mayonnaise into yolks. You can add a little bit more by the table spoon full to get the creaminess that you desire. Spoon yolk and mayonnaise mixture into egg whites. Sprinkle paprika on top. Serve or cover and place in refrigerator for up to three days.

These are the best, simplest deviled eggs! But you know Grandma is always in the kitchen. She has a few things you can add to the egg yolk/mayonnaise mixture. If you add a tablespoon of softened butter to the mix it adds a very silky texture. About two tablespoons of finely chopped onions is always a great addition. Also, about two table spoons of sweet relish adds a unique flavor. Who doesn't love bacon? A couple table spoons of pre-cooked crumbled bacon or bacon bits is a favorite. Oh, and for those that like mustard, you can add about one tablespoon. Too much mustard does get overpowering. Any one of these or all of these can be mixed into the egg yolk/mayonnaise mixture before spooning the mixture into the egg whites. Grandma's favorite addition is smoked paprika to sprinkle on top!!
