Irish Nachos

if you like potato chips and corned beef...this is for you!
Happy St. Patrick’s Day!
Do you love nachos but want to make them with an Irish flare, or do you just have to much corned beef and not know what to do with it?
Either way, Irish Nachos are for you!
1 medium to large bag of your favorite potato chips. The thicker kettle chips work best. Granny likes Tim’s Original Potato chips.
¼ to ½ pound chopped corned beef. Or what ever you have left over from St. Patrick’s Day!
½ to 1 pound of Cheddar Cheese
Other optional toppings:
Olives Onions
Mushrooms Sweet Peppers
Jalapenos Tomatoes
Place potato chips on oven safe non-stick baking sheet or pan. Spread corned beef liberally over chips. Add additional optional toppings. Granny’s favorites are onions and olives. Sprinkle cheddar cheese over the top. You can use other cheeses if you would prefer. Pepper Jack adds a bit of spice if you like it spicy!
Place in a pre-heated oven at 350 degrees for about 20 minutes or until the cheese is melted and just turning golden brown. Serve with any dips that you like.
